In an effort to expand my own skills, I recently signed up for the Authentic Thai cooking class. With just eight students, the intimate setting was the ideal place to uncover the secrets of the region’s cuisine while learning about Thai culture.
Under the guidance of Patrick Bouklee and Titi Singnu, two passionate chefs and former owners of a Thai restaurant, the class began with a lesson in basic knife skills. Bouklee demonstrated the proper way to hold a knife by securing the knuckles on one side and wrapping the fingers around the handle, keeping them safely away from the blade. After a few minutes we moved on to the magic of flavor.
As we were introduced to the ingredients that form the backbone of Thai cuisine, we explored how historical influences have shaped these flavors. For example, soy and oyster sauces were introduced to the area by Chinese immigrants. Bouklee also explained that while each sauce and spice has a distinct role, it is their combination that creates the vibrant flavors characteristic of Thai dishes.
The structure of each class — blending a taste of cultural history with culinary know-how — makes the overall experience meaningful and memorable. As we were guided through the process of crafting a vibrant curry and a classic Pad Thai, we were encouraged to think about the ways we could add or subtract flavors to make each dish our own. Inspired, I tried my hand at a green curry that Bouklee invited the other students to sample as a benchmark for their own creations.
Bouklee and Singnu also took the time to expertly demonstrate a few culinary techniques — we learned how to crack an egg with one hand and practiced the fine art of flipping food in the pan — though not without a few humorous moments when ingredients occasionally ended up on the floor.
After two hours of hands-on learning and laughter, the class gathered around the table to enjoy the fruits of our labor. The Pad Thai and green curry we made were served alongside steaming white rice, and the meal was crowned with a scoop of refreshing coconut ice cream for dessert. Every bite was a delicious reminder of the techniques and flavors we had mastered during the class. And best of all, we were able to take home leftovers to enjoy later.
The experience at BiteUnite goes beyond a simple cooking class — it is a deep dive into the history, techniques, and culture of various cuisines. I walked away not only with new recipes and skills but also with a newfound confidence and passion for cooking. The class inspired me to explore other culinary traditions, and I’m now excited to try everything from sushi to pasta to macarons in future sessions.
This journey reminded me that cooking is an art — a delightful blend of tradition, technique, and a lot of heart. For a full schedule of upcoming classes at BIteUnite NYC in NoMad and a price list, visit biteunite.com.
